You can use php-thttpd (there is a binary package here from the NSLU2 project: http://ipkg.nslu2-linux.org/feeds/unslung/cross/php-thttpd_2.25b-5.1.4-1_armeb.ipk)
This doesn't allow php as an interpreter but its statically linked in with the thttp web server if what your trying to do is web server based php. I use it and it works great.
